Creating a user defined field related to a customer just like to Primary Contact field works

Is there a demo or documentation that I can obtain that will give me the instructions to create a user defined drop-down field where the values in the drop-down are specific to the customer being viewed in the Customer Maintenance window. The drop-down should function just like the Primary Contact field. It should allow the user to select an existing value using the lookup, or bring up the maintenance screen to add new values. Any information on this would be great!
