We would like our item numbers and item descriptions to display differently on purchase orders than our own part numbers and descriptions. I have tried playing around with the 'Alias' option in Inventory Maintenance, but I'm not sure this is the correct place. Is this possible?

Yes I think you are in the right area.  You can set up vendor aliases then change your PO form to print the alias instead of the regular part number.
